Bacon Cheese Frittata

This baked frittata recipe is a wonderful dish to serve at brunch or to take as leftovers for lunch. Make this frittata even easier by using cooked bacon from the freezer.

Ingredients

  • 5 slices bacon
  • 6 large eggs
  • 1 cup milk
  • 2 tablespoons butter, melted
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup chopped green onions
  • 1 cup shredded Cheddar cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 7×11-inch baking dish.
  2. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble and set aside.
  3. Whisk eggs, milk, melted butter, salt, and pepper together in a bowl; pour into the prepared baking dish. Sprinkle with green onions and crumbled bacon. Cover with Cheddar cheese.
